How to Track Messages into a mail hub/gateway in MS Exchange 2010.
1. Open the Exchange Management Console.
2. Click Toolbox on the left menu.
3. On the right, under Mail flow tools, choose Tracking Log Explorer.
(If you choose Message Tracking, this is a web browser tool, which requires you to also input the mailbox which is not convenient. It's more of a delivery confirmation tools for a specific mailbox.)
4. After the tool auto checks for an update, select the option to Go to the Welcome screen.
5. On the Message Tracking Parameters screen, complete any of the following fields desired (do at least one): Recipients, Sender, Subject, and adjust the Start and End dates.
6. Click Next.
7. Wait for the results. View the results.
You can click the Cancel Execution option if the search is taking too long (e.g. Because your search was too general and there are too many results)
Although you can do a cntrl+a to select all records, you cannot copy and paste the table, just one cell. I personally use my Mac Grab screen shot program to get the results in my RDP or VM window so I can send the results to someone.
You can also click Go Back to adjust the search options/criteria and try again.

You can also run shell scripts to track messages via the Exchange Management Shell tool.
You can use step 5 above to generate the shell script to save for later execution. The code is displayed under Exchange Management Shell command heading.
